Snowball cookies! A classic and favorite!

Recipe:
2 ¾ – 3 cups fresh milled soft white wheat
¾ cup powdered sugar
¼ teaspoon salt
1 teaspoon almond extract
2 teaspoons vanilla extract
2 stick softened butter
Optional mix-ins: finely chopped pecans, mini chocolate chips
Directions:
Preheat oven to 375 degrees F.
Cream together softened butter, powdered sugar, vanilla, and almond extract in the bowl of a stand mixer.
Slowly beat in flour and salt. The dough should just come together – not too dry and not gooey.
Add in whatever mix-ins you choose (we did half with chopped pecans and half with mini chocolate chips).
Scoop out dough, roll into 1 inch balls with your hands, and place on a lined baking sheet. These can be placed close together, but not touching, as they will not spread much.
Bake for 11-12 minutes until firm. You do not want them to brown.
Once they have cooled enough to pick up, dip them in powdered sugar.
