Easy Skillet Cornbread

1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
¼ cup sugar (optional)
1 cup milk (or buttermilk)
2 large eggs
½ cup melted butter (plus 1 tablespoon for skillet)
▶️Instructions
Preheat oven to 425°F (220°C). Place a 10-inch cast iron skillet in the oven while it heats.
Mix dry ingredients in a bowl: cornmeal, flour, baking powder, salt, and sugar.
Mix wet ingredients in another bowl: milk, eggs, and melted butter.
Combine wet and dry ingredients. Stir just until mixed — do not overmix.
Prepare skillet: Carefully remove hot skillet from oven. Add 1 tablespoon butter and swirl to coat.
Pour batter into the hot skillet. It should sizzle.
Bake for 18–22 minutes, or until golden and a toothpick comes out clean.
Cool slightly, slice, and serve warm.
