Savory Stir-Fried Garlic Beef with Baby Bok Choy
Ingredients:
1 lb beef sirloin or flank steak, thinly sliced
1 tablespoon cornstarch
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
1 tablespoon sesame oil
2 tablespoons vegetable oil
4 cloves garlic, minced
1-inch piece fresh ginger, grated
1/4 teaspoon crushed red pepper flakes (optional)
1/4 cup water or beef broth
1 tablespoon brown sugar
4 cups baby bok choy, halved lengthwise
Cooked jasmine rice, for serving
Sesame seeds and sliced green onions, for garnish
Directions:
In a medium bowl, toss the sliced beef with cornstarch and 1 tablespoon soy sauce. Let marinate for 10-15 minutes.
In a small bowl, whisk together oyster sauce, hoisin sauce, remaining soy sauce, sesame oil, brown sugar, and water or broth. Set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat. Add beef in batches, sear until browned and just cooked through, about 2-3 minutes per side. Remove from skillet and set aside.
In the same skillet, add garlic, ginger, and red pepper flakes. Sauté for 30 seconds until fragrant.
Add bok choy and cook for 2-3 minutes, until leaves are wilted and stems are tender-crisp.
Return beef to the skillet and pour in the sauce mixture. Toss everything together and cook for another 2-3 minutes, until the sauce thickens slightly.
Serve hot over jasmine rice. Garnish with sesame seeds and green onions.
