2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp baking soda
1 tsp salt
1/2 tsp black pepper
1/2 cup cold unsalted butter, cubed
1½ cups shredded sharp cheddar cheese
3/4 cup buttermilk

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
In a large bowl, whisk together flour, baking powder, baking soda, salt, and black pepper.
Cut the cold butter into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
Stir in the shredded cheddar cheese.
Pour in the buttermilk and gently mix just until the dough comes together. Do not overmix.
Turn the dough onto a lightly floured surface and pat it out to about 1-inch thickness. Cut biscuits using a round cutter or glass.
Place biscuits on the prepared baking sheet, close together for soft sides.
Bake for 12 to 15 minutes, until golden brown on top.
Serve warm with butter, honey, or alongside soups and stews.
