Hearty Beef and Mushroom Stew with Root Vegetables
▶️Ingredients:
1 lb beef stew meat, cubed
1 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
1 lb mushrooms, sliced
2 large carrots, sliced
3 celery stalks, diced
4 cups beef broth
1 cup red wine (optional)
2 tbsp tomato paste
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
2 tbsp fresh parsley, chopped (for garnish)
▶️Directions:
In a large pot, heat olive oil over medium-high heat. Add beef cubes and sear until browned on all sides. Remove beef and set aside.
In the same pot, add onions and garlic; sauté until softened, about 3-4 minutes.
Add mushrooms, carrots, and celery. Sauté for an additional 5 minutes.
Stir in tomato paste, thyme, rosemary, salt, and pepper. Return beef to the pot.
Pour in beef broth and red wine, if using. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until beef is tender.
Adjust seasoning if needed and serve garnished with fresh parsley.
