Ingredients:
1 whole rabbit, cut into serving pieces
1 cup buttermilk
1 cup all-purpose flour
1/2 cup cornmeal
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper, optional
Vegetable oil, for frying
Instructions:
Rinse the rabbit pieces and pat them dry. Place them in a bowl and cover with buttermilk. Let them marinate for at least 1 hour, or longer for more tenderness.
In a shallow dish, mix the flour, cornmeal, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.
Heat vegetable oil in a deep skillet or heavy pot to 350°F (175°C).
Remove the rabbit pieces from the buttermilk, letting the excess drip off, then dredge them in the flour mixture, pressing gently so the coating sticks well.
Carefully place the coated rabbit pieces into the hot oil and fry in batches for 8 to 10 minutes, turning occasionally, until golden brown, crispy, and fully cooked through.
Remove and place on paper towels to drain excess oil.
Serve hot with biscuits, gravy, or your favorite dipping sauce.
