Cheesy Beef Taco Pasta

Ingredients

  • 1 lb Ground beef (Note: A 1 lb package balance perfectly with one box of pasta)
  • 1 box (16 oz) Small pasta shells
  • 1 block (16 oz) Velveeta Cheese (cut into cubes)
  • 2 packets Taco Seasoning Mix
  • 1 can (10 oz) Diced Tomatoes & Green Chilies (like Ro*Tel)
  • 1 bag (8 oz) Shredded Sharp Cheddar cheese
  • 2 cups Milk (to melt with the Velveeta for a silky sauce)

Instructions

1. Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Add the small pasta shells and cook according to the package instructions until al dente. Drain and set aside.

2. Brown the Beef

  • In a large skillet over medium-high heat, add the ground beef.
  • Cook until completely browned, breaking it up with a wooden spoon. Drain any excess grease.

3. Make the Cheese Sauce

  • In a pan or a pot over medium-low heat, combine the cubed Velveeta cheese and milk.
  • Stir continuously until the cheese is completely melted into a smooth, creamy sauce.

4. Mix Everything Together

  • Add the cooked pasta, browned ground beef, and the diced tomatoes & green chilies into the creamy cheese sauce.
  • Sprinkle the taco seasoning packets evenly over the mixture.
  • Stir everything together thoroughly over low heat for a few minutes until the seasoning is fully incorporated and the pasta is hot.

5. Serve and Garnish

  • Scoop the warm taco pasta into bowls.
  • Top with a generous handful of shredded sharp cheddar cheese so it melts beautifully on top before serving.
    Enjoy your meal!
