Ingredients
- 1 lb Ground beef (Note: A 1 lb package balance perfectly with one box of pasta)
- 1 box (16 oz) Small pasta shells
- 1 block (16 oz) Velveeta Cheese (cut into cubes)
- 2 packets Taco Seasoning Mix
- 1 can (10 oz) Diced Tomatoes & Green Chilies (like Ro*Tel)
- 1 bag (8 oz) Shredded Sharp Cheddar cheese
- 2 cups Milk (to melt with the Velveeta for a silky sauce)
Instructions
1. Cook the Pasta
- Bring a large pot of salted water to a boil.
- Add the small pasta shells and cook according to the package instructions until al dente. Drain and set aside.
2. Brown the Beef
- In a large skillet over medium-high heat, add the ground beef.
- Cook until completely browned, breaking it up with a wooden spoon. Drain any excess grease.
3. Make the Cheese Sauce
- In a pan or a pot over medium-low heat, combine the cubed Velveeta cheese and milk.
- Stir continuously until the cheese is completely melted into a smooth, creamy sauce.
4. Mix Everything Together
- Add the cooked pasta, browned ground beef, and the diced tomatoes & green chilies into the creamy cheese sauce.
- Sprinkle the taco seasoning packets evenly over the mixture.
- Stir everything together thoroughly over low heat for a few minutes until the seasoning is fully incorporated and the pasta is hot.
5. Serve and Garnish
- Scoop the warm taco pasta into bowls.
- Top with a generous handful of shredded sharp cheddar cheese so it melts beautifully on top before serving.
