Lemon & Garlic Chicken Bites

Ingredients

  • 500 g boneless chicken breast or thighs, cut into bite-size pieces
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt (or to taste)
  • ½ tsp dried oregano or Italian seasoning
  • Optional: chili flakes or fresh parsley

Method (Air Fryer)

  1. In a bowl, mix olive oil, garlic, lemon zest, lemon juice, paprika, pepper, salt, and oregano.
  2. Add chicken bites and toss well to coat. Marinate 10–30 minutes if time allows.
  3. Preheat air fryer to 190°C (375°F).
  4. Arrange chicken in a single layer.
  5. Air fry for 10–12 minutes, shaking halfway, until golden and cooked through.
  6. Garnish with parsley and extra lemon juice if desired.

Method (Stovetop)

  1. Heat a skillet over medium-high heat with a little oil.
  2. Add chicken in a single layer.
  3. Cook 6–8 minutes, turning occasionally, until browned and fully cooked.
  4. Finish with a squeeze of lemon.
