Ingredients :
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup cold butter, cubed
3/4 cup milk
300 g breakfast sausage
2 tablespoons butter or sausage drippings
2 tablespoons all-purpose flour
2 to 2 1/2 cups milk
Salt, to taste
Black pepper, to taste
Instructions :
Preheat the oven to 425°F (220°C).
In a bowl, mix flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
Add milk and gently mix until just combined.
Turn the dough onto a floured surface, pat it out, and cut into biscuits.
Place biscuits on a baking sheet and bake for 12–15 minutes until golden.
While the biscuits bake, cook the sausage in a skillet over medium heat until browned.
Add butter or drippings if needed, then sprinkle flour over the sausage and stir well.
Gradually pour in the milk, stirring constantly until the gravy thickens.
Season with salt and black pepper.
Split the warm biscuits and spoon the sausage gravy generously over the top.
