Ingredients
For the jalapenos:
6 large fresh Jalapenos, halved lengthwise and seeded
1 tsp olive oil
Pinch of salt
For the Cajun shrimp:
12 medium shrimp, peeled and deveined
1 tsp Cajun seasoning
½ tsp smoked paprika
1 tsp olive oil
For the stuffing:
115 g (4 oz) cream cheese, softened
½ cup shredded cheddar cheese (or Monterey Jack)
2 tbsp green onions, finely sliced
1 garlic clove, minced
½ tsp Cajun seasoning
¼ tsp black pepper
Optional garnish:
Fresh cilantro or parsley
A squeeze of lime juice
Instructions
Prep Jalapenos
Preheat oven to 200°C (400°F).
Slice Jalapenos in half lengthwise, remove seeds and membranes.
Brush lightly with olive oil and sprinkle with a pinch of salt.
Make filling
In a bowl, mix cream cheese, cheddar, green onions, garlic, Cajun seasoning, and pepper until smooth.
Stuff Jalapenos
Spoon cheese mixture into each jalapeno half.
Cook shrimp
Toss shrimp with Cajun seasoning, paprika, and olive oil.
Quickly sear in a skillet for 1–2 minutes per side (they will finish cooking in the oven).
Assemble & bake
Place one shrimp on top of each stuffed jalapeno.
Arrange on a parchment-lined baking sheet.
Bake for 12–15 minutes until cheese is melted and bubbling.
Finish & serve
Garnish with fresh cilantro or parsley.
Add a squeeze of lime juice for brightness.
