Mozzarella-Stuffed Onion Rings with Garlic Butter
Ingredients:
– 2 large sweet onions (such as Vidalia)
– 1 cup shredded mozzarella cheese
– 1 cup all-purpose flour
– 2 large eggs, beaten
– 1 cup seasoned breadcrumbs
– ½ cup grated Parmesan cheese
– 4 cloves garlic, minced
– ½ cup unsalted butter
– 1 teaspoon dried oregano
– 1 teaspoon salt
– ½ teaspoon black pepper
– Oil for frying
Directions:
1. Begin by peeling the onions and slicing them into 1-inch thick rings. Carefully separate the rings, keeping the larger outer rings intact for stuffing.
2. In a bowl, combine the mozzarella cheese, oregano, salt, and black pepper.
3. Stuff each large onion ring with the mozzarella mixture, pressing gently to ensure the filling stays inside.
4. Set up a breading station: place flour in one shallow dish, beaten eggs in another, and a mixture of breadcrumbs and Parmesan cheese in a third.
5. Dip each stuffed onion ring first in flour, coating fully, then in beaten eggs, and finally in the breadcrumb mixture until well-coated.
6. In a large skillet, heat oil over medium heat until hot. Carefully place the breaded onion rings in the skillet, frying them in batches to avoid overcrowding.
7. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to absorb excess oil.
8. In a small saucepan, melt the butter over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant, but not browned. Drizzle over the hot onion rings before serving.
