Pizza Enchiladas

Ingredients:

For the Filling:

  • 1 lb lean ground beef
  • 1 cup diced yellow onion
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 cup mini pepperoni (or chopped regular pepperoni)
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

For the Sauce:

  • 1 (15 oz) can pizza sauce
  • ½ cup enchilada sauce (mild or medium)

For the Enchiladas:

  • 8 medium flour tortillas
  • 1 ½ cups shredded mozzarella (for topping)
  • ¼ cup sliced black olives (optional)
  • 2 tbsp chopped parsley or basil (optional)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook the beef mixture:
    In a large skillet over medium heat, cook the ground beef and onion until browned. Drain excess grease.
    Add garlic powder, Italian seasoning, salt, pepper, and pepperoni. Stir and cook for 2 more minutes.
  3. Mix in cheese:
    Remove from heat and stir in mozzarella and Parmesan cheese until melty and combined.
  4. Prepare the sauce:
    In a bowl, whisk together the pizza sauce and enchilada sauce.
  5. Assemble enchiladas:
    Spoon a little sauce into the bottom of the baking dish.
    Place a scoop of the beef mixture into each tortilla, roll up, and place seam-side down in the dish.
  6. Top it off:
    Pour remaining sauce over the enchiladas. Sprinkle with mozzarella and optional black olives.
  7. Bake:
    Cover with foil and bake for 20 minutes. Uncover and bake an additional 10 minutes, or until cheese is bubbly and golden.
  8. Garnish and serve:
    Sprinkle with parsley or basil before serving.

Tips:

  • Add chopped mushrooms, bell peppers, or jalapeños for a veggie twist.
  • Swap ground beef with Italian sausage for extra flavor.
  • Serve with a side salad or garlic bread for a complete meal!
