Spinach & Cheese Puff Pastry Squares

Ingredients:

2 sheets puff pastry, thawed

1 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

300g (10 oz) fresh spinach (or 200g frozen, thawed and squeezed dry)

1 cup ricotta cheese

1/2 cup crumbled feta cheese

1/2 cup shredded mozzarella cheese

1 egg (for the filling)

Salt and pepper to taste

1 egg yolk + 1 tbsp milk (for egg wash)

Sesame seeds (for topping, optional)

Instructions:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

Sauté the vegetables:

Heat olive oil in a skillet, add chopped onion and cook until translucent. Add garlic and spinach. Cook until spinach is wilted and moisture evaporates. Let it cool slightly.

Make the filling:

In a bowl, mix sautéed spinach mixture with ricotta, feta, mozzarella, and 1 egg. Season with salt and pepper.

Assemble:

Place one sheet of puff pastry on the prepared baking sheet.

Spread the filling evenly, leaving a small border around the edges.

Place the second sheet of puff pastry on top. Press edges with a fork to seal.

Use a knife to lightly score into square portions (don’t cut all the way through).

Brush with egg wash and sprinkle sesame seeds on top.

Bake:

Bake for 25–30 minutes or until golden brown and puffed. Cool slightly before cutting fully into squares.

💡 Notes:

You can add herbs like dill or parsley for added flavor.

Great with frozen spinach too—just thaw and squeeze out excess liquid.

Puff pastry should be cold when working with it for best results.

🔥 Tips:

For a crispier bottom, bake directly on a heated oven tray or pizza stone.

Make ahead and reheat in the oven to keep them crispy—not the microwave.

Can also be turned into mini hand pies for a party platter.

Makes 9 squares (serves about 4–6 people as a snack or appetizer).

❓ Q&A:

Q: Can I use other greens instead of spinach?

A: Absolutely. Try kale, chard, or even finely chopped broccoli.

Q: Can this be made dairy-free?

A: Yes—use dairy-free cheeses and check the puff pastry brand (some contain butter, some are vegan-friendly).

Q: What sauce goes well with this?

A: A side of yogurt-garlic dip, tzatziki, or marinara complements beautifully.

Enjoy!
