1 cup of almond flour
1/4 cup coconut flour
1/4 cup granulated sugar
1 tablespoon of lemon zest
2 tablespoons of fresh lemon juice
4 tablespoons of melted coconut oil
1/2 teaspoon vanilla extract pinch of salt
Optional: additional granulated sugar for coating
Instructions:
In a mixing bowl, combine almond flour, coconut flour, granulated sugar, lemon zest, and salt. Mix It well.
Add melted coconut oil, lemon juice and vanilla extract to dry ingredients. Stir until the mixture comes together and has a dough-like consistency.
Form the dough into small balls about 1 inch in diameter and place on a parchment-lined baking sheet.
If desired, roll the truffles in additional granulated sugar to coat them. This step is optional but adds a nice touch of sweetness and presentation.
Put the baking sheet with the truffles in the refrigerator for about 30 minutes to harden.
After the truffles have cooled and hardened, they are ready to serve. Store leftovers in an airtight container in the refrigerator.
