Walking Taco Casserole

This comforting, crowd-pleasing casserole packs all the flavors of a classic walking taco into an easy, bakeable dish. It is crunchy, cheesy, and packed with savory goodness.

Ingredients

The Meat & Bean Base:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained

The Layers & Toppings:

  • 1 bag Fritos corn chips (or Doritos), gently crushed
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 cup sour cream
  • 1 cup diced tomatoes
  • Green onions, sliced (optional, for garnish)
  • Guacamole (optional, for serving)

Instructions

Step 1: Cook the Beef Base

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with cooking spray.
  2. Heat a large skillet over medium-high heat. Add the ground beef and cook until entirely browned, breaking it apart with a wooden spoon as it cooks. Drain any excess grease.
  3. Stir in the taco seasoning packetsalsa, drained black beans, and drained corn. Let the mixture simmer for 3 to 5 minutes until everything is well combined and heated through.

Step 2: Assemble the Casserole

  1. First Layer: Spread the seasoned ground beef and bean mixture evenly across the bottom of your prepared baking dish.
  2. Second Layer: Spread the sour cream evenly over the beef layer (or you can dollop and swirl it into the meat mix).
  3. Third Layer: Sprinkle a generous layer of the crushed Fritos or Doritos over the sour cream.
  4. Fourth Layer: Top the chips evenly with the shredded cheese and the diced tomatoes (and sliced green onions if using).

Step 3: Bake to Perfection

  1. Place the casserole in the preheated oven and bake for 15 to 20 minutes, or until the cheese is completely melted, bubbly, and the edges are slightly golden.

Step 4: Serve

  1. Remove from the oven and let it cool for about 5 minutes before slicing.
  2. Serve warm with extra dollops of sour creamguacamole, or your favorite taco sauces. Enjoy!
