Ingredients
The Meat & Bean Base:
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup salsa
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
The Layers & Toppings:
- 1 bag Fritos corn chips (or Doritos), gently crushed
- 2 cups shredded cheddar or Mexican blend cheese
- 1 cup sour cream
- 1 cup diced tomatoes
- Green onions, sliced (optional, for garnish)
- Guacamole (optional, for serving)
Instructions
Step 1: Cook the Beef Base
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with cooking spray.
- Heat a large skillet over medium-high heat. Add the ground beef and cook until entirely browned, breaking it apart with a wooden spoon as it cooks. Drain any excess grease.
- Stir in the taco seasoning packet, salsa, drained black beans, and drained corn. Let the mixture simmer for 3 to 5 minutes until everything is well combined and heated through.
Step 2: Assemble the Casserole
- First Layer: Spread the seasoned ground beef and bean mixture evenly across the bottom of your prepared baking dish.
- Second Layer: Spread the sour cream evenly over the beef layer (or you can dollop and swirl it into the meat mix).
- Third Layer: Sprinkle a generous layer of the crushed Fritos or Doritos over the sour cream.
- Fourth Layer: Top the chips evenly with the shredded cheese and the diced tomatoes (and sliced green onions if using).
Step 3: Bake to Perfection
- Place the casserole in the preheated oven and bake for 15 to 20 minutes, or until the cheese is completely melted, bubbly, and the edges are slightly golden.
Step 4: Serve
- Remove from the oven and let it cool for about 5 minutes before slicing.
- Serve warm with extra dollops of sour cream, guacamole, or your favorite taco sauces. Enjoy!
