1. Boil the potatoes
Place the potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil, then reduce the heat and simmer for 15–20 minutes, or until the potatoes are completely fork-tender.

While the potatoes cook, melt the butter in a small saucepan over medium-low heat. Add the minced garlic and cook for about 1–2 minutes, just until fragrant. Don’t let the garlic brown.

3. Drain well
