Ingredients
- 500 g beef mince
- 300 g potatoes, diced
- 320 g ready-made shortcrust pastry
- 1 medium onion (120 g), finely chopped
- 180 g mature cheddar cheese, grated
- 30 g beef gravy granules
- 6 eggs
- 10 g sea salt
- 3 g black pepper
- 1 egg (50 g), beaten, for glazing
Method
Step 1: Prepare the Eggs
Boil 5 eggs in a saucepan of water for 8–9 minutes until hard-boiled. Transfer them to cold water, allow them to cool completely, then peel and set aside.
Step 2: Cook the Potatoes
Place the diced potatoes in a pan of salted water and cook until just tender. Drain well and allow them to cool slightly.
Step 3: Prepare the Filling
Heat a large frying pan over medium heat and cook the finely chopped onion until softened and translucent. Add the beef mince and cook until fully browned, breaking it apart with a spoon as it cooks. Season with sea salt and black pepper.
Stir in the cooked potatoes and beef gravy granules, mixing thoroughly until the filling is rich, flavorful, and evenly combined. Remove from the heat and allow the mixture to cool slightly.
Step 4: Assemble the Pie
Preheat the oven to 200°C (390°F).
Roll out the shortcrust pastry and use it to line a deep pie tin, reserving enough pastry for the lid.
Spread half of the beef mixture into the pastry case. Arrange the boiled eggs in a neat row through the center of the filling. Cover with the remaining beef mixture and sprinkle the grated mature cheddar cheese evenly over the top.
Place the pastry lid over the pie, seal the edges securely, and trim any excess pastry. Brush the surface generously with beaten egg and cut a small steam hole in the center.

Bake for 35–40 minutes, or until the pastry is beautifully golden brown, crisp, and cooked through.
