Lemon Blueberry Bread

Ingredients:
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- ½ cup milk
- 1 cup fresh or frozen blueberries
- 1 tbsp flour, for coating the blueberries
Method:
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan. Toss the blueberries with 1 tablespoon of flour and set aside.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, then mix in the vanilla extract, lemon juice, and lemon zest.
- Gradually add the dry ingredients, alternating with the milk. Mix just until combined—do not overmix.
- Gently fold in the flour-coated blueberries. Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool further.
